Sweet Potato Skillet Nachos

Skip the Mexican restaurant! Whip up some healthy nachos in your own home. Sweet potatoes, avocado, black beans, ground beef with home-made seasoning. It's perfect for a party, or a family meal.

Ingredients

  • 2 small sweet potatoes
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 lb ground beef
  • Taco seasoning (see below)
  • 2 cups black beans, drained
  • ½ cup cheese
  • ½ avocado
  • Pico de gallo or salsa
  • Fresh cilantro, for garnish

Taco Seasoning

Use for 1lb ground beef
  • 1 T chili powder
  • 1 ½ teaspoon cumin
  • 1 teaspoon sea salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon red pepper flakes, optional
Triple the recipe and store the rest in an airtight jar to use for another time!

Directions

  • 1. Preheat oven to 400˚F.
  • 2. Evenly slice sweet potatoes into rounds.
  • 3. In a small bowl mix olive oil, garlic powder, paprika, salt, and pepper. Pour over sweet potatoes until well-coated.
  • 4. Lay rounds flat on a parchment-lined baking sheet and bake for 20 minutes..
  • 5. While sweet potatoes are baking, brown ground beef and add taco seasoning.
  • 6. Line the bottom of a medium-sized skillet with the sweet potato rounds. Top with seasoned ground beef, black beans, and cheese. Broil for 5-10 minutes or until toppings are heated through and cheese is melted.
  • 7. Garnish with avocado, pico de gallo, cilantro if desired. Serve immediately.
  • 8. Enjoy!
Other options to put on top, jalapeno, green onions, sour cream. You can also top with shredded chicken and/or bacon. So many ways to change this up to your liking!
